Salad in the Sun

Edit: I’ve been informed we used to make this at Girl Scout Camp, under the name Salad in the Sun… maybe that’s why it tastes good, brings back good memories 🙂

Fruit- Nature’s candy! I have to take advantage of fruit while it’s in season.  Strawberries, blueberries, cherries, raspberries, pineapple, grapes…. My fridge is loaded.

Blueberries are so dang expensive- they JUST came down to $2.50 for a large carton. Before, they were $4 for a tiny little container.  I could eat 2-3 big cartons a week… Heck, I could eat one in a sitting, if I let myself. Most of the year, I can’t be spending that much on a handful blueberries!  So I mow them down while they’re cheap.

I gathered up some glorious fresh fruit and threw it all in a container, like my mom used to do for just about every summer dinner I can remember.  And then I searched Pinterest to get some inspiration.

Instant vanilla pudding mix? Sounds weird, but okay, I’ll try it.

Victory! I don’t know what it is about this, but I just can’t stop eating it. Soooo tasty, and very refreshing! Continue reading

Stuffed French Toast with Fresh Fruit Topping

I have a confession… I don’t think I have ever made French toast. Nope, never once in my life! It’s not that I don’t like French toast, it’s just that I’ve always thought of French toast (especially stuffed) as a “special occasion” breakfast item. Guess there’s a first time for everything!

So, I took the opportunity to make this for Pat for the morning of his birthday this year. I surprised him with breakfast in bed, but (at 10 AM) he wasn’t even awake enough to enjoy it, really. I suppose, if you can’t sleep in on your birthday, then when can you? Continue reading

Garbage Disposal Salad

Introducing, the “garbage disposal” salad!

Tonight's "I am too lazy to cook after running on a Sunday night" Garbage Disposal Salad

I first heard the term in a magazine I was reading while running at the gym, in an interview with Kristen Bell. She’s vegetarian, and this is one of her favorite things to do for a quick meatless meal. I love her, she’s adorable… and smart too, obviously!

The concept is simple: You grab anything you can find in your refrigerator, and toss it into a big salad. I’ve found it is an excellent way to use leftovers or veggies that are about to go bad. It’s an even better way to boost your fruit and veggie intake for the day, and is perfect for when you’re feeling lazy and not in the mood to cook… like me tonight. Continue reading
