Red, White & Blue Trifle Jars

Hope everyone had a fabulous 4th of July (and were able to stay cool)! It was nice to have a day off and have no set plans. Any plans we had were kyboshed by the heat! It was really difficult to find anything to do outside for more than 5 minutes at a time… 105+ degrees is just unbearable for me! I suppose that is why I live in Wisconsin and not Arizona, right?

A bunch of us had planned on going to Concerts on the Square- a Madison summer tradition, where music acts play on Wednesday nights on the deck of the Capitol and everyone lays out blankets and drinks wine. But, we decided against it this week; we weren’t going to sit outside when it was still 101 degrees at 7 PM! Bleh.

So, I had originally made these desserts for everyone to eat during Concerts. I thought they would be super convenient in their own little containers and spoons- great to take to potlucks, pool parties, etc.  Since I didn’t get to share them with everyone like I had planned, Pat & I just got to enjoy them a few days longer (they kept nicely for a days, and the cake stayed quite moist).

These would be great any time of year, but are especially great for patriotic events for obvious reasons!

The first layer is white cake mix, prepared as the box instructs, with several (could be 20+) drops of blue food coloring added to the batter. When it’s all baked and cooled, I took the top layer of cake off. When the cake browns it kind of turns greenish, and kind of yucky looking, but underneath the cake is nice and blue. Smush some crumbled cake down into the bottom of the mason jar.

The second layer is sliced strawberries.

The top layer is a mixture of the following ingredients:
One small box of lemon instant pudding mix
8 oz tub of Cool Whip
1 cup cold milk
¼ cup powdered sugar

You can use other flavors of pudding if you’d like (although it might not turn out white), but I really liked the lemon- it went well with the strawberries and gave it a nice light summery flavor!

    Those are SO adorable! How long do you think they would keep?

      I had them for about a week in the fridge, and they held up great. Cake stayed moist and the strawberries didn’t break down at all. I layered them so the cake wouldn’t touch the topping so it wouldn’t get mushy 🙂
