Salad in the Sun

Edit: I’ve been informed we used to make this at Girl Scout Camp, under the name Salad in the Sun… maybe that’s why it tastes good, brings back good memories 🙂

Fruit- Nature’s candy! I have to take advantage of fruit while it’s in season.  Strawberries, blueberries, cherries, raspberries, pineapple, grapes…. My fridge is loaded.

Blueberries are so dang expensive- they JUST came down to $2.50 for a large carton. Before, they were $4 for a tiny little container.  I could eat 2-3 big cartons a week… Heck, I could eat one in a sitting, if I let myself. Most of the year, I can’t be spending that much on a handful blueberries!  So I mow them down while they’re cheap.

I gathered up some glorious fresh fruit and threw it all in a container, like my mom used to do for just about every summer dinner I can remember.  And then I searched Pinterest to get some inspiration.

Instant vanilla pudding mix? Sounds weird, but okay, I’ll try it.

Victory! I don’t know what it is about this, but I just can’t stop eating it. Soooo tasty, and very refreshing!

And while I don’t necessarily love pudding by itself (or from a nutritional standpoint), fruit for dessert is better than a lot of things you could be having!

As a side note, you’re welcome to use sugar free vanilla pudding mix to lower the sugar content. I absolutely can’t use anything with aspartame or any kind of sugar substitute in it, due to a really bad intolerance. And that’s all you need to know about that!

1 small box vanilla instant pudding mix (or sugar free)
1 can pineapple tidbits with juice
Strawberries, blueberries, bananas, grapes, whatever fruit you’d like
(although raspberries might fall apart if you plan on having leftovers)

Instructions: Combine all ingredients in a large bowl, and refrigerate for 1 hour before serving.

    Julie, that looks so delicious and would be fun to make for a summer cookout. The pudding makes it just different enough from a bowl of fresh fruit, yet light enough for summer fare. This is the best time for summer fruit – fresh and coming down in price, too. I’ll try this one soon!

      Omg. It didn’t even occur to me!! I knew I had a memory of it and I couldn’t put my finger on it… Good ol girl scout camp!
