Introducing, the “garbage disposal” salad!

Tonight's "I am too lazy to cook after running on a Sunday night" Garbage Disposal Salad

I first heard the term in a magazine I was reading while running at the gym, in an interview with Kristen Bell. She’s vegetarian, and this is one of her favorite things to do for a quick meatless meal. I love her, she’s adorable… and smart too, obviously!

The concept is simple: You grab anything you can find in your refrigerator, and toss it into a big salad. I’ve found it is an excellent way to use leftovers or veggies that are about to go bad. It’s an even better way to boost your fruit and veggie intake for the day, and is perfect for when you’re feeling lazy and not in the mood to cook… like me tonight.

Some ideas for ingredients: avocado, tomato, onion, peppers, mushrooms (they go bad so quickly), leftover veggies from dinner last night, carrots, grapes, blueberries, apples, peaches, spinach, lettuce, basil, peanuts, pecans, walnuts, sunflower seeds, pasta, rice…. the possibilities are endless! Grab anything you can find!

You don’t even have to use much dressing, because there are so many flavors. It “sticks” together better if you use a little bit, though. And, you can absolutely add meat, like grilled chicken, if you want to!

Here’s what was in my fridge tonight:

A tomato, about to go bad
A red pepper, been in the fridge a few days, about to be slimy
Leftover corn
Leftover mango salsa
Leftover chipotle sauce from yesterday’s fish tacos
Spinach, about to go bad
Extra grilled chicken breast from dinner on Wednesday (not pictured)
Tortilla chips, for some crunch
Shredded cheddar
