Fresh Mango Salsa

“Mmmm… it smells like summer!” That’s what Pat said when he stuck his nose near the bowl of salsa… and it’s so true.  It immediately reminds me of that summer brightness.

Maybe it’s the aroma of cilantro that makes everything smell fresh and clean, or maybe it’s when the lime juice mixes with the veggies and ignites all the flavors. Or the sweetness of the mangoes. YUM.

Regardless, this salsa is an excellent way to make your winter a little more summery! Everybody can agree they need a little bit of brightness right now!

Side note: Red onions are NOT my friend. I avoid them at all costs. They give me the WORST breath and leave a terrible aftertaste in my mouth, and OH MY LORD, this recipe is no exception. I originally had this as having red onions and changed it to white! It’s up to you which you use, but Warning: Do not eat this before a hot date! I will not be held accountable for dates who run the other way!

Ingredients:

1 avocado, skinned and pitted 
4 roma tomatoes, seeded and rinds removed
¼ medium white or yellow onion
1 mango, skinned and pitted
3 cloves garlic, minced
1 jalapeno, seeded
Juice of 1 lime
¼ cup fresh chopped cilantro
Drizzle of olive oil
Salt and pepper to taste

I feel like this doesn’t need a whole lot of instructions, but just in case you need them…. remove skin and pit from avocado. Skin and pit mango.  Seed and remove inner rinds from tomatoes. Then chop like crazy! Chop onion. Chop garlic. Chop jalapeno. Chop cilantro. Chop avocado. Chop mango. Chop chop chop!

Place it all in a bowl, toss it with lime juice, a drizzle of olive oil, and salt and pepper.

All the chopping takes quite a while. So worth it though, as the recipe makes quite a bit and doesn’t go bad very fast. I was so anxious to make this right away when I bought the ingredients, but the avocado and mango weren’t ripe, so I had to let them sit for 2 days on the counter. Tip: you can also put them in a paper bag at room temperature, which will make them ripen even faster. 

The bright colors are so beautiful!

I would highly recommend this on top of white fish, or on fish tacos! Hmm.. next recipe, perhaps? Stay tuned!
