Apple Glazed Pork Chops

Did you know your taste buds and palette evolve every 7 years? This is my mom’s recipe; she sent it to me about 2 months ago and I decided to give it another chance, since it’s been 10+ years since I’ve had this. I will be the first to admit that I definitely did not eat this meal with a smile on my face when my mom made it throughout my childhood.  Actually, I think I used to scrape all of the apples off the pork chop and push the raisins to the side.  My, how my tastes have changed… now I love it! Pat loved it too, and he even ate the raisins 🙂


1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/8 teaspoon pepper

4 pork chops (I used good quality, medium thick cut bone-in chops)
2 tablespoons butter or margarine
2 tablespoons flour
2 tablespoons brown sugar
1 1/2 cups apple juice
2 apples, peeled and sliced thin – any kind
1/3 cup raisins
1/2 teaspoon cinnamon

Combine 1/4 cup flour, salt, mustard, and pepper.  Coat chops by shaking in a Ziploc baggie with the flour mixture. Brown in margarine in large skillet, 2 at a time. Remove chops and place in 9×13 pan.

Stir 2 tablespoons flour and brown sugar into drippings to make a thick paste. For me, there wasn’t much liquid left from the pork chops, so I started a roux with the flour and a little margarine first. Then, add a little apple juice and stir in to blend. Don’t worry if the flour is a little bit lumpy- as the starch cooks down, it will smooth out. Gradually add more apple juice and cook and stir over medium heat until thickened.

Arrange apple slices and raisins over the pork chops, and cover with apple glaze.  Sprinkle with cinnamon.  Cover and bake at 350 degrees for 1 hour.

You could even make it a day ahead of time, cover it and refrigerate, and pop it in the oven the next day when you’re ready for dinner!
